Do college professors assign homework every night?

And if they do how often do they take homework up?

Depends on the professor, but most do. Homework can simply include reading something (which doesn't need to be collected, obviously), or if it is an assignment that needs to be handed in the due date will be on your syllabus and the assignment will usually be collected in class.
